Vladimir Odoevsky o kuhni i smysle edy: kogda gastronomiya staje filosofiyey

V istorii russkoy kul'tury est' figury, kotoryye otkazyvayutsya vписat'sya vuzkuyu ramki odnoy professii. Vladimir Fedorovich Odoevsky, knyaz', pisatel', filosof, muzykoved, izobretatel' i pedagog, byl takim chelovekom. No sredi vsego ego mnogochislennyh talentov est' odin, kotoryy dolgoye vremya ostavalsya v tene ego literaturnoy i filosofskoy slavy, — eto ego strast' k kulinarii. Dlya Odoevskogo kulinariya ne byla prostoy mestom prigotovleniya pishchi, a laboratoriyey smyslov, prostranstvom, gde vstrechayutsya iskusstvo, etika i filosofiya. Ego gastronomicheskie vzglyady, izlozhenyye v znamenitykh «Lektsiyah gospodina Pufa», okazalis ne prostoy zabavnym kuriozom XIX veka, a pravil'nym manifestom, kotoryy i segodnya zvyashchayetsya udivitel'no sovremennym.

Doktor Puf: kulinar'nyy alter ego filosofa

V seredine 1840-x godov na stranicah彼得буржской «Literaturnoy gazety» poyavilsya udivitel'nyy personazh — professor Puf, «doktor entsiklopedii i drugikh nauk o kuchonnom iskusstve». Za etoy shutlivoy maskoy skryval'sya sam Odoevsky, kotoryyreshil'sya razdelit'sya s publikoy svoimi gastronomicheskiyimi otkrytiyami. Sovremenniki, vsego govorim, skoroy ko vremени razgadali inkognitno: knyaz' byl izvesten kak znatnyy kulinar i gurme, i ego uveryanie ne bylo sekreтом.

Samo imya Puf — ot angliyskogo glagola to puff (razdyuvat', reklamirovat') — uzh sadrzhalo v sebya dolyu ironii. Doktor Puf byl narochno samouveren, mnogosloven i bezapel'ny, no za etoy komicheskoy maskoy skryval'sya glubokiy filosofskiy zamysel. «Lektsii» Pufa — eto ne prostoy poverennaya kniga, potomuyu, napisannaya v igrovoy mane. V svoih «lektsiyah» Odoevsky-Puf formuliruet osnovy svoey gastronomicheskoy filosofii, kotoryya pronikayet vse ego tvorchestvo.

Gastroonomiya kak naука i iskusstvo

Odoevsky reshitochno vystupayet protiv rasprostranennogo mneniya, chto gastroonomiya — eto tol'ko sinonim obzhorstva. Po mneniyu Odoevskogo, gastroonomiya sluzhit svyaz'yu mezhdu oddalennymi narodami, soprotivlitsya razvitiyu torgovli i obespechivaet politiko-ekonomicheskoe znachenie. Ona ustanavlivayet cenu veshcham pochitayemym i gotova voznagradit' togo, kto s pomoshch'yu iskusstva ulyuchshit' kakoy-to estestvennyy proizvod. Tочно eto preobrazuet prostoy prigotovleniy pishchi v pravil'noye iskusstvo — iskusstvo, kotoryy, kak sovershenniy filosof, dostojen ne men'shego vneniyatiya, chem zhivopis' ili muzyka.
